Orange Chip Teacake

serves 18

1 2/3 cups cake flour, sifted
1 teaspoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
7 tablespoons unsalted butter, room temperature
1 egg
1/2 cup milk
1 tablespoon orange zest
1 teaspoon orange extract
1/2 teaspoon almond extract
2 egg whites
1 rounded cup chocolate chips

glaze
1 cup powdered sugar
1 tablespoon orange juice
1 tablespoon milk

Preheat oven to 350F.
Grease a 9x5 inch loaf pan.
Combine flour, baking powder, and salt. Set aside.
Cream butter and sugar until fluffy.
Beat in egg.
Mix in dry ingredients alternating with the milk.
Stir in zest and extracts. Set aside.
Beat egg whites to stiff peaks.
Fold egg whites into batter.
Pour into pan.
Bake 50 minutes, or until a toothpick inserted into the center comes out clean.
Cool 10 minutes, then remove from pan and place on a wire rack.
Make the glaze by mixing glaze ingredients together, add more milk or juice if necessary.
Poke holes in top of cake using a skewer or fork, and drizzle glaze over cake.
